Immunology is quite complex, but the common thread which relates all diet-induced inflammatory reactions is mediator release from white blood cells. Mediators are like messengers inside the body which communicate inflammation. The inflammatory response communicated by these mediators in response to food and chemicals is essentially why we experience symptoms such as joint pain, migraines, GERD, IBS, and other chronic imbalances.
When a person’s blood is introduced to reactive or sensitive foods, their white blood cells produce higher levels of mediators like cytokines and prostaglandins which build up and enlarge the cell. This increase in cell volume can then be measured. Thus, the presence of, and relative amount of inflammation can be quantified. From these results, a personalized meal plan is created which minimizes the immune response and reduces symptoms of inflammation.
